Is it best to use the standard media net network profile or is there better network setting you could make in a new profile?

Use the standard profile if you are AT&T, if not, use your carriers settings.

I personaly use this network profile as my default connection for all games and apps.

       new network profile:

     Set Name: (whatever)
     Access Name: wap.cingular
     Auth Type: None
     User ID: <blank>
     Pasword: <blank>
     Protocol: HTTP
     Home URL: http://
     Proxy Address: <blank>
     Linger Time (sec.): 300
Nothing set in Advanced Settings

Then go to my stuff folder select applications when it opens at the bottom tap more then connections then at the top  click default and then choose the network profile you created now all your games and apps will use that by default it is also nice this way because if you do an update via master key it will hold this as your default connection.
The only app that I change back to medianet is mobile email.

I use the same as E.Cadro for my default, I use the media net profile for media net browser, mobile email, yellowpages, and the ATT browser. I found that anything preinstalled works better on the media net profile for some reason.

Is there a way to delete the default network profiles? They are pretty uselless for me and sometimes some programs change the network profilers even though I didnt do anything to them.

You can't delete the network profiles that came with the phone only ones that you create.
